My favourite breakfast foods

Breakfast is my favourite meal of the day. Growing up we were always encouraged (and actually not allowed to leave the house) without having a good breakfast. It’s also one of the most challenging meals especially since 5 out of the 7 days of the week it’s on the go when you’re in a rush. Here are some of my favourite, healthy and quick breakfast choices. I find it helpful to prep a little bit on Sunday to help with breakfasts on the go during the week

Smoothies

My Nutri-bullet has really been used well since we got it as a wedding gift. It’s funny, I didn’t actually register for one, but it’s the one mini-appliance I use almost every day. Here are some of my favourite smoothie combos. I make them all with a vanilla rice protein powder and almond milk. Sometimes a smoothie is all I need, other times I will pair it with a paleo pumpkin muffin which I will post the recipe for.

Yummy, protein packed breakfast smoothie combinations:

Blueberry, spinach, banana, protein, almond milk

Blueberry, spinach, chia seeds, protein, almond milk (chia seeds are great because a tablespoon thickens up the smoothie and gives it a great boost of Omega 3’s

Mango, strawberry, peach, spinach, banana, protein, almond milk

Scrambled eggs

Although these need to be cooked, it takes less than 10 minutes and will keep me full until lunch time, so well worth the time.

2 eggs (or egg whites depending on what you like)

Spinach (this can be something that is prepped on a Sunday)

Feta cheese

I will eat the eggs on top of my gluten free toast for a yummy, protein packed breakfast.

Pumpkin Muffins

1 cup of pumpkin
1/4 cup apple sauce
2 eggs
1 tsp vanilla
1/4 cup honey
1 cup almond meal
1 tsp cinnamon
1 tsp baking powder
Chocolate chips or walnuts (I prefer the chocolate)
1 tbsp of flaxseeds and/or chia seeds
¼ tsp salt
Mix all the wet and dry ingredients together and then bake at 350 degrees for 25-28 minutes

Flourless pancakes

1 banana
2 eggs
1 tablespoon of almond butter
Cinnamon
Tablespoon of flaxseeds
You just mix everything together and cook like you would regular pancakes. I use coconut oil in the pan instead of butter. Just top with berries, honey and enjoy!!

– I drink a lot of herbal tea, my favourite is peppermint
– I have been thinking of getting my certification in Holistic Nutrition but haven’t found the right time to do it. I should probably just do it now. There’s no time like the present 
